Chocolate Covered Weekend at the Atlanta Botanical Gardens 

This weekend, Jackson led a demonstration on how to make Chocolate Sorbet in the Gardens.

The recipe will be on the Botanical Gardens’ website along with the participants’ recipes for shortbread bars, fondue, smoothies and other awesome treats.

What do Preserving Place and Honeysuckle Gelato have in common? Watermelons!

Our companies work to waste nothing. Preserving Place uses watermelon rinds to make their Aunt Joyce’s Watermelon Rind Pickles and we use the guts to make our Watermelon Sorbet. 

In their own words:

Preserving Place is a unique “farm to store” retail concept focusing on food preservation and preserving our Southern sense of place. Our state of the art commercial kitchen is used to make small batch, hand made jams, pickles and condiments, as well as a culinary school, teaching students how to cook and put up their own food at home. 

Preserving Place aims to be Atlanta’s one-stop shop for all home food preservation supplies, such as the complete line of Ball Mason jars and products for hot-water bath and pressure canning; fermentation supplies, such as crocks, kraut mallets, and bowls for kraut making; cheese making supplies; and a curated selection of books with good advice on food preservation and also Southern cookbooks.

They are located on Atlanta’s Westside beneath Star Provisions’ Abattoir Restaurant.

It’s back to school time and we made some blueberry jam for our Special Batch Peanut Butter and Jelly Gelato for Whole Foods Market in Sandy Springs. 

But it’s not just for the kids. Indulge yourself in a grownup PBJ.

In the Kitchen | Honeysuckle Sea-Salted Caramel

We make many types of caramel for our gelato. Today we made a batch of our Sea-Salted Caramel.

First, we caramelize cane sugar until it is an amber color. This is allowed to cool to about 230℉ (110 ℃). Then we stir in sea salt, Madagascar bourbon vanilla, milk, and cream.

The Sea-Salted Caramel is used for a number of our flavors including Sea-Salted Caramel Gelato, Bourbon Pecan Gelato, Snacks on a Plane Gelato, and Turtles.
